I first discovered this technique for cooking the potatoes with the butter, cream, and garlic in a saucepan or Dutch oven on the stovetop from a Southern Living recipe. The potato slices are tender and infused with all of the great flavor before they even go into the baking dish, the starches released by the potatoes help to thicken the sauce, and the cream reduces and thickens as it simmers.
